- Any of a class of carbohydrates, such as starch and cellulose, consisting of a number of monosaccharides joined by glycosidic bonds.
- One of the group of complex carbohydrates which yield simple sugars when hydrolyzed by the action of enzymes, acids, or alkalis. The term sometimes includes the disaccharides and trisaccharides, but is more correctly limited to substances of the general formula (C6H10O5)n, where n is probably a large number. Starch, cellulose, dextrine, glycogen, and gums are polysaccharides.
